Your daily dinner inspo featuring a few #KeyKitchenGadgets from the SnS Guide (check it out at snatchesandsamosas.com/shop) to whip up a satisfying meal with very little effort - my favourite!
First I threw lamb shanks in the instant pot with @organicbonebroth and tons of fresh garlic, mint and Greek seasoning. Low pressure cooked for 6 hours and it was falling off the bone perfection.
Then I sliced up a bunch of potatoes and boiled them in hot water with a pinch of baking soda and salt for 2 mins and then marinated them in lots of lemon juice, olive oil, Greek seasoning and a bit of mustard and tossed them in the fridge. After marinating for as long as possible, tossed them in the airfryer at 390 for 25-35 mins.
I also used an old (and I mean old because I haven’t seen the inside of a @traderjoes in over a year with the border restrictions 😭) box of falafel mix to make a few air fryer falafels.
For the sauces, I mixed @spreadem_kitchen cashew garlic tzatziki with water to create more of a liquid consistency to pour over everything and @habibisfoods hummus (which does not contain any inflammatory vegetable oils like most store bought hummus).
