If you don't already know by now, it's all about the sauces for me. When it comes to creating homemade meals that you ACTUALLY enjoy, you CANNOT skimp on flavour.
First I made a cashew mayo in the VitaMix using
1 cup cashews soaked in water
1 lemon juiced
1 tbsp apple cider vinegar
sprinkle of salt
1/2-3/4 cup of water
Then I added
4 large pickles, diced
1 lemon juiced
a handful of fresh (or dried) dill
Blend until well mixed.
For the sweet potato fries, I soak the potatoes for a few hours (this step helps make them crispy) and then dry them well and cut into uniform pieces. Spray generously with avo oil, season with salt and pepper and airfry for 20-30 mins at 425.
While the fries are cooking, I cut a @TruLocal cod fillet into uniform pieces, and either dig in egg, flax egg or avocado oil and toss it in a panko/spice blend. I used a gluten free panko breading from @choices_markets that is made of white flour and potato starch.
Then I turned the airfryer down to 400 to bake the cod for 10-12 mins or until the outside is crispy.
